The three-time All-professional American’s football career began with the USFL’s New Jersey Generals. In 1983 and 1985, he was named the USFL rushing champion. In 1985, the Dallas Cowboys drafted Herschel in the fifth round (114th overall) in anticipation of the end of the USFL. In actuality, the USFL ceased operations, and Herschel joined the Cowboys for the 1986 season.

Walker’s first two seasons with the Cowboys were highlighted by conflict with teammate Tony Dorsett, who was displeased with his reduced playing time after Walker’s arrival. However, after Dorsett was traded to the Denver Broncos, Walker was allowed to reach his full potential.
